Roasted Acorn Squash

Savor the warmth and earthiness of Autumn with a delicious and healthy treat. The longer you roast the acorn squash the sweeter and more caramelized it becomes.

 

Serves 1-2

Ingredients:

  • one acorn squash, halved and seeded
  • coconut oil or melted butter
  • optional toppings: cinnamon, chopped nuts, coconut butter, maple syrup, dried fruit

Directions:

  1. Preheat oven to 375 degrees.
  2. Brush cut side of squash with cooking fat.
  3. Place squash cut side up in oven safe glass pan.
  4. Roast squash for 1 hour or until golden and tender.
  5. Top with desired topping and enjoy.

  1. I love this recipe for acorn squash. A little coconut butter and cinnamon and it makes a wonderful and filling dessert!
